Amex: How to Keep Getting SUBS

Overview
Amex generally has some of the highest sign-up bonuses. Example, their Amex Platinum Business just had a 250K sign up bonus. Meaning that even at a 1 cpp, it is worth at least 2.5K for a 700 dollar annual fee, netting you about 1.8K USD.
Problem
Amex however usually only allows you to get 1 sign-up bonus per card, unless you get a mail in offer. But how do you get around this then?
